Lekker Day for a Braai Broer

Lets take out some Lamb Chops and Boerewors,
light a fire using Namibian Hard Wood and get the party going.
Oh yes some cold beer some red wine, music.

Big Drum Braai

I like to use a traditional 45 Gallon Drum Braai.
It gives good heat and it lasts a long time.
The heat is even and the meat cooks slow
when you want it to.
Also great for steak when you want to sear it fast and very hot.

Here I am braaing chicken drum sticks
with a masala basting.

Basting methods

I always consider either marinating the meat and then braaing over hot coals or just cooking from raw and gently painting the meat as it cooks.

I like to just braai meat from raw and baste as I cook. The marinade
crystallizes and keeps a kind of crust around the meat so the cooking
is more gentle on the meat.
Only when I have to cook for a lot of people I find it easier to marinade the
meat for 24 Hours before the braai.
